Position Overview

The Executive Chef Steward is a senior leadership position responsible for overseeing all aspects of kitchen operations related to cleanliness, hygiene, and the proper maintenance of kitchen equipment and facilities in an industrial catering environment. In addition to managing stewarding staff, the Executive Chef Steward works closely with the culinary team to ensure that food safety, sanitation standards, and operational efficiency are maintained at all times. This role involves a balance of strategic management and hands-on responsibilities to ensure smooth kitchen operations and a safe working environment.

Key Responsibilities

• Stewarding & Sanitation Management:

o Oversee the day-to-day activities of the stewarding team, ensuring the kitchen and all food preparation areas are cleaned and sanitized in accordance with food safety regulations.

o Develop and enforce cleaning schedules for all areas, including kitchen surfaces, equipment, storage areas, and dining areas if applicable. o Ensure the proper cleaning and sanitation of all kitchen utensils, cookware, and machinery, including dishwashers and other equipment.

o Manage waste disposal, ensuring that food waste and other refuse are handled and disposed of correctly.

• Kitchen Equipment Maintenance:

o Supervise the maintenance of kitchen equipment and appliances, coordinating with external service providers for repairs or replacements as needed.

o Ensure kitchen tools and equipment are in proper working order and available for use at all times.

o Implement a system for routine checks and maintenance of all kitchen infrastructure to prevent equipment breakdowns.

• Staff Management & Training:

o Lead, train, and mentor the stewarding team, ensuring they follow the company’s standards for cleanliness, safety, and hygiene.

o Conduct performance evaluations and provide feedback to stewarding staff to improve skills and efficiency.

o Ensure all kitchen staff adhere to safety guidelines, including the correct handling of cleaning agents and the use of protective gear.

• Health, Safety & Compliance:

o Monitor compliance with local and national health and safety regulations and food safety standards in all areas of the kitchen and storage.

o Ensure that all staff are properly trained in health and safety procedures, including handling hazardous materials and using cleaning chemicals safely. o Ensure compliance with food waste management and sustainability initiatives in line with company policies.

• Inventory Management & Stock Control:

o Oversee inventory management of cleaning supplies, detergents, and other stewarding-related materials, ensuring that stock levels are maintained and replenished.

o Assist in managing the stock of kitchen supplies, including ensuring that items are stored appropriately and efficiently. o Maintain accurate records of stock usage and report shortages or ordering needs to senior management.

• Collaboration with Culinary Team:

o Work closely with the kitchen and culinary teams to ensure the effective flow of food production, minimizing disruptions due to cleanliness issues or equipment malfunctions.

o Ensure that kitchen areas are organized and ready for food service, providing a clean and safe environment for food preparation. o Coordinate with the kitchen team to manage cleaning and maintenance schedules without disrupting meal service times.

• Budgeting & Cost Control:

o Assist in budgeting for the stewarding department, ensuring that cleaning supplies and equipment are purchased efficiently and within budget. o Monitor and control costs associated with the stewarding function, finding ways to reduce waste and increase operational efficiency.

• Quality Assurance & Continuous Improvement:

o Regularly assess and improve the cleanliness standards of the kitchen, ensuring that they meet or exceed industry expectations.

o Work with senior management to implement quality assurance procedures and continuous improvement initiatives within the stewarding team.
