Position Overview: The Chef de Partie – Hot in an Industrial Catering Services setting is responsible for overseeing the preparation, cooking, and presentation of hot dishes. This role requires a deep understanding of cooking techniques, menu execution, and kitchen operations, ensuring that meals are prepared to the highest standards while adhering to food safety, hygiene, and quality control protocols. The Chef de Partie – Hot will report to the Senior Chefs and will work closely with kitchen staff to ensure the timely and efficient production of meals.

Key Responsibilities: 1. Hot Food

Preparation & Cooking:

o Oversee the preparation and cooking of hot dishes according to the menu, ensuring consistent quality and taste.

o Ensure that hot food items are prepared according to recipes and portion sizes, maintaining high culinary standards. o Operate kitchen equipment such as stoves, ovens, grills, fryers, and other appliances to prepare meals.

o Ensure proper seasoning and presentation of hot dishes before serving.

2. Menu Execution & Quality Control:

o Prepare and cook hot food items based on daily or weekly menus, ensuring they meet client requirements and dietary specifications. o Work with the Head Chef and Sous Chef to ensure consistency in the quality, appearance, and taste of hot dishes. o Conduct regular taste tests and quality checks of hot foods to maintain the standard.

o Ensure that hot dishes are served at the appropriate temperature and that food is safely stored and reheated when necessary.

3. Kitchen Station Management:

o Take ownership of the hot section in the kitchen, including managing the setup, preparation, and cleaning of the station.

o Ensure that all food and ingredients required for hot food preparation are readily available and properly stored.

o Maintain an organized and clean work station, adhering to hygiene and safety standards at all times. o Ensure compliance with all health and safety standards, including safe food handling and proper equipment use.

4. Staff Supervision & Team Collaboration:

o Supervise junior kitchen staff and assist them with hot food preparation and cooking techniques. o Provide guidance and mentorship to kitchen assistants and trainees, helping them develop their culinary skills.

o Coordinate with other kitchen team members to ensure smooth and efficient service during busy periods. o Assist in training staff on new menu items, cooking techniques, and safety procedures.

5. Inventory & Supply Management:

o Monitor and manage stock levels for the hot section, ensuring that ingredients are fresh and readily available.

o Assist in ordering ingredients and supplies for the hot food section, minimizing waste and ensuring cost-efficiency.

o Maintain proper stock rotation (FIFO – First In, First Out) to ensure that ingredients are used in order of delivery and not wasted.

6. Health & Safety Compliance:

o Follow all food safety protocols, including safe storage and handling of hot food items and ingredients.

o Ensure the cleanliness and sanitation of the kitchen, utensils, and cooking equipment, adhering to hygiene standards. o Monitor and maintain the temperature of hot foods, ensuring that they are stored, cooked, and served safely. o Participate in daily or weekly safety audits and report any maintenance or safety issues in the kitchen.

7. Time Management & Efficiency:

o Ensure the timely preparation and cooking of hot dishes to meet service schedules and customer expectations.

o Prioritize tasks during peak hours to manage high volumes of food preparation. o Work efficiently under pressure, maintaining a calm and organized approach during busy service times.

8. Customer & Client Satisfaction:

o Ensure that hot food is served with attention to detail, presenting meals to meet company standards and client expectations. o Respond promptly and professionally to any issues or customer complaints regarding the quality of hot dishes.

o Contribute to creating a positive experience for guests by ensuring food quality and presentation are always top-notch.
