Job Description
Job Summary: The Food Safety Manager is responsible for overseeing the food safety management system in an industrial catering environment. This includes ensuring compliance with food safety regulations, implementing hygiene practices, conducting regular inspections, and training staff on food safety procedures. The ideal candidate will have a deep understanding of food safety regulations, strong organizational skills, and the ability to lead and educate staff on best practices to prevent foodborne illnesses and ensure a safe dining experience for all customers.
Key Responsibilities:
1. Food Safety Compliance & Regulation: o Ensure that all food safety regulations, including local, national, and international standards, are followed within the catering operations.
o Regularly update policies and procedures to ensure compliance with any changes in food safety laws and regulations.
o Coordinate and ensure compliance with food safety audits and inspections from local health authorities and regulatory bodies.
2. HACCP & Food Safety Plans:
o Develop, implement, and maintain the Hazard Analysis and Critical Control Point (HACCP) plans, food safety management systems, and standard operating procedures (SOPs) for food handling, storage, and preparation.
o Conduct risk assessments to identify potential hazards in food preparation and implement corrective actions to mitigate risks.
o Monitor critical control points to ensure food safety standards are consistently met.
3. Training & Education:
o Provide regular training to kitchen staff, waitstaff, and management on food safety practices, personal hygiene, safe food handling, and sanitation procedures.
o Conduct food safety orientation for new employees and ensure continuous education for all staff.
o Organize refresher courses and certification programs to ensure staff are up to date on food safety practices.
4. Monitoring & Inspections: o Conduct regular inspections of food preparation areas, storage facilities, and dining areas to ensure adherence to food safety guidelines.
o Perform daily checks on temperature control of stored food and cooking equipment, verifying proper food storage, and sanitation practices.
o Document all food safety inspections, issues identified, and corrective actions taken.
5. Corrective Actions & Reporting:
o Investigate any instances of foodborne illness or safety violations and implement corrective actions to prevent recurrence.
o Prepare detailed reports on food safety audits, inspections, incidents, and compliance to present to senior management and regulatory authorities. o Track and report food safety issues and develop long-term strategies to prevent non-compliance.
6. Supplier & Vendor Compliance:
o Monitor and ensure that food suppliers and vendors meet the required food safety standards and deliver safe products. o Maintain a supplier approval system and conduct periodic reviews of vendor practices regarding food safety.
7. Inventory & Waste Management:
o Oversee proper stock rotation (FIFO), storage, and handling of food products to ensure they are kept within safe temperature ranges and used within safe periods.
o Ensure compliance with proper waste management practices, including the safe disposal of food waste and recyclable materials.
